The knowledge and exposure made me realised and appreciate both the creativity and peculiarity of food. Being savvy in both international and Nigeria cuisine is an added advantage as a chef. The uniqueness of these class of recipes trickles down from National to Regional base on cultural, political and economical background.
Most people eat food because they are hungry but at Auma food is cooked and eaten for its nutritional benefit, more so plating is an essential attitude as a chef because we eat with the eyes first.
Very importantly, through Auma I now know why most food service operations fail(low bottom line) and why others stands the test of time.
